Meet Chicago’s cocktail craftsman, Mark Darress.


Mark is recognized for mixing up buzz worthy drinks in Chicago and Miami.
Pushing limits in cocktail culture, Mark specializes in his very own shrub flavors. When coming up with signature drinks, he starts with a clear mind, carefully considering ingredients for his guests and the genre that he is serving. Mark has mastered his talents through nearly a decade of experience in all genres of nightlife.

You are probably asking, “What is a shrub?” A shrub is a specialty liquid made of three to five ingredients, typically including a summer fruit. It is then infused into a drink—and it’s thoroughly delightful.

Room Seven’s featured $77.00 signature cocktail is inspired by Mark’s passion for pushing the limit in mixology. Mark’s “his and her” signature cocktails for Room Seven are “7 Ladies for Him,” & “7 Gentlemen for Her,”—each is infused with 7 ingredients that include Woodford Reserve Rye, Demerara, Cynar, Sweet Vermouth, Orange Bitters, Black Walnut Bitters, and Orange Twist. Hers includes Grey Goose, Lemon Juice, Lavender, Champagne, Edible flower, Angostura Bitters and Orange Bitters. In his spare time, Mark continuously experiments to create unique drinks, shrubs and bitters. He also has perfected clear ice, a carefully crafted ice that makes a statement in any glass. As a recognized bartender, Mark uses his craftsmanship at Liquor Lab Chicago where he teaches cocktail classes at exclusive events throughout Chicago and was recently hired on at Chicago Athletic Association.

Accolades: I|O Urban Roofscape, Vertigo Sky Lounge, Mr. Chow Miami, and Soho House Miami. In 2015, Mark won the Woodford Reserve Manhattan Competition and was a Four Roses Competition Finalist for winning concoction, the Woody-hattan.
